After the excitement of the snow storm and getting off of work early, I was more than content to spend the rest of Wednesday night cozied up in my apartment.
The thundersnow storm called for some good ole comfort food in the form of a mixed greens salad and red beans & rice. In a frying pan I lightly sauteed some bell pepper and onion. Once that softened up I added 1/2c kidney beans, ~1/3c brown rice, a bay leaf, pinch of thyme and oregano, salt and pepper and stirred. I also added a few splashes of vegetable broth and let the mixture simmer and thicken up. Voila! I topped it with some shredded sharp cheddar.
The rest of the night was quiet until I got in bed. That was around 11:30pm when my building decided to snowblow and shovel sidewalks. I was pretty pissed since I’m a light sleeper. I finally fell asleep around 1am when they finished. Jerks.
Thankfully we had a delay yesterday so I got to sleep in a little bit. I was excited to mix up my hot cereal a little bit. I added some raisins, a couple of spoonfuls of applesauce, cinnamon, and some blueberries into the cereal. I topped it with some sugar-free syrup, crushed pecans, and ~1 teaspoon of peanut butter.

And this was the rest of the walk into work. I still am very thankful that this was my biggest commuting headache of the week. I can’t believe that traffic caused many people’s commutes to be 5 – 12 hours on Wednesday night.
Lunch was a big salad topped with more kidney beans and 1/3c of brown rice I seasoned with Trader Joe’s 21 Seasoning Salute and 2 clementines.
The office was so quiet and I was able to be incredibly productive all day long. That meant lots of sitting which motivated me to head straight to the gym after work. I spent 20 minutes on the ARC Trainer and 30 on the elliptical with Shape Magazine.
I was quite hungry when I got home and threw together an easy dinner – sweet potato fries, ~1/2 serving Alexia crinkle fries, roasted broccoli and carrots, and baked beans. I let my oven do all the work
The rest of the night was quiet and I got to bed much earlier and slept much better!

I thought my commute was bad until I heard all the horror stories of people who had to drive! I just had a very slow bus ride.
