Wonky Wednesday

I think that confusing my days yesterday set me up to feel just a little bit “off” this week. I can’t pinpoint any particular thing but in general I feel like I have more to do than I have time for.

I switched back to a favorite breakfast – cream of buckwheat cereal, in light of the return of winter weather. This bowl just had cinnamon and 1/2T of chia seeds mixed in and was topped with blueberries, pomegranite arils, 1/2T of peanut butter and a super light sprinkle of granola. It was perfect.

Lunch was leftover chicken chili with spinach and was just as good, if not better, after sitting in the fridge overnight.

When my pear for a snack (and bit of trail mix) failed to quell my hunger I picked up a small salad to fill me up. This had mixed greens, beets, carrots, a piece of tofu sushi, and some mixed beans.

I had a bunch of stuff to tackle when I got home from work which meant that today was a rest day from exercise. As a reward for my productivity, I painted my nails for my conference this weekend.

I didn’t get hungry until late which meant dinner was easy – a small sweet potato with a serving of black beans topped with BBQ and cheddar and some roasted broccoli and asparagus.

I then proceeded to have some fruit and cereal when that didn’t completely fill me up.

This morning I was thrilled for my wonky feeling Wednesday to be behind me but wasn’t too excited since I slept poorly. I threw together a breakfast my foggy mind could handle – an English muffin, half topped with red pepper spread and an egg white, half with PB and a bit of fig jam, plus some fruit.

Here’s to hoping the rest of the day leaves that wonky feeling behind!

Lotsa Toppings

Happy Tuesday. How was your day? Time felt like it crawled by a little bit for me but I was able to be productive and take advantage of the day.

Winter was once again upon us when I woke up. My grumbling stomach was ready for breakfast and it was a hot cereal kind of morning. This bowl is half cream of buckwheat and half Mighty GF hot cereal since I used up the last of the buckwheat. On top are blueberries, 2 crushed pecan halves, a few pom arils, 1/2T PB and ~1T of the Maple Bakery on Main Granola.

I loved the crunch of the granola and the flavor – strong notes of maple and not to sweet. As you can see there is a ton of texture!

3 hours later my stomach was rumbling once again and I had some trail mix and Whole O’s, a dried fig, and when that didn’t fill me up, a Fiberful fruit leather with a smidge of peanut butter which did the trick. I’m not sure where that intense snack attack came from but I honored it.

I hit the gym on my lunch break for Total Body Conditioning. After class I cooled down with 15 minutes on the stationary bike (3.05 miles – my legs were tired).

Lunch was a big veggie bowl topped with a serving of Cuban black beans. I also had kale, bell peppers, corn, and broccoli plus a few tortilla chips for crunch.

Snack was 2 clementines and some rice leftover from a meeting.

When I got home I was in the mood to flake out for a bit so I watched 2 episodes of How I Met Your Mother on DVD before my stomach let me know it was once again time to eat. I spotted this recipe for sushi bowls last week and have been craving them since.

I followed the recipe for the sauce and did my own thing for some of the toppings. I sliced and roasted a red bell pepper, sauteed shiitake mushrooms on the stove top in vegetable broth and a dab of teriyaki sauce, and used Trader Joe’s roasted seaweed snacks as my nori.

In addition to all of those toppings I added a fried (in cooking spray) egg, seaweed gomasio, some crushed almond slices, and a [too] heavy dose of sriracha.

I’m currently sipping on hot tea and watching and being inspired by the Biggest Loser to continue the trend of a relaxing night.

On a Roll

I’ve got to say, despite the frigid cold today, I’ve had a good day and have been on a roll.

I set my alarm so wake up in time for Body Pump this morning. I had a slice of peanut butter toast before I left and was more than ready for my second breakfast by the time I got home. The class was pretty good – my muscles were tired towards the end of each track but I’m not feeling too sore just yet.

My body was craving protein so I had an egg white with some cheddar chunks on top of another piece of toast spread with red pepper spread. I also enjoyed a pear.

Then I made my way to Whole Foods were I went well over budget for the week. I chalk it up to needing to restock pantry items and the couple of new things I picked up. I also tasted a few fun samples while I shopped.

I got:

I then got down to business. I cleaned out my pantry, the top of my fridge, dusted, decluttered, and washed dishes. And did it all dance party-style to Ace of Base, Billy Joel, and Gaga ;)

I was ready for lunch which was the last 1/3c of baked beans plus brown rice, spinach, and peas topped with soy sauce and the seaweed gomasio.

And then a while later I munched an apple.

Now I’m getting ready to head out for some pre-babysitting shopping and dinner. I’m not sure what’ll be on tap for after. I just hope it’s something warm!

How do you deal with the cold? Today I’ve ignored the weather, not checking temps at all and lounged around in flannel pajama pants under my favorite blanket while watching tv.

Sick Day Eats

Everything was going swimmingly on Thursday until the afternoon. I had another egg sandwich for breakfast, the work day was flying by.

I had a salad with roasted beets and carrots plus leftover stir fry for lunch.

Everything was great. Until I snacked on a rice cake and orange around 5 and developed the worst stomach ache I’ve had in a while. I walked around a bit after work, hoping that would help. I changed into sweatpants. Still nothing. Let’s just say, to spare you details, that Thursday night’s stomach ache caused some other unpleasantness, I skipped dinner, and my stomach hurt til about 5am and woke me up often.

Yesterday I was lucky to get to work from home to spare my office whatever potential ailment I had. I laid in bed from the time my alarm went off until about 10am and decided to try some food.

I had a slice of toast, toaster waffle (I was craving both) and applesauce.

A couple of hours later my appetite was back and I had a cup of tomato soup plus the leftover risotto that I’d made and attempted to eat on Thursday night. I used Arborio rice with spinach, broccoli, and sun-dried tomatoes.

Afternoon snacks included toast with some Swiss cheese, a smoothie, half an apple, and some nuts.

And I met up with friends for Shabbat services which were the perfect low key activity for me after my day. I came home, had a late night snack of half a pear and some beans and rice.

And today I woke up at noon (I guess I had more than just a stomach ache) and threw together a random brunch – egg white, half a pear, a black bean tamale and half a toaster waffle.

I just got back from the gym where my usually 35 minute elliptical routine was much harder than it should have been and now I’m headed off on a 30 hour adventure to Virginia. Details when I get back!
