Hot Enough to Fry an Egg

Today was the 3rd day in DC’s extreme heat wave. There was a new record temp. set at Ronald Reagan Airport – 102! Yes, I’m quite the nerd and remember these odd little facts that I read in my afternoon news recap. It was also hot enough to prompt a little Twitter conversation about it almost being hot enough to cook an egg on the sidewalk. While I did not attempt this after work today, I thought I’d share a picture of what I’m talking about for all of you not from Texas :-)

Also, I’m sure many of you much of my griping about the cold weather, blizzards, etc. and pleading for summer to arrive. Right? Well, I just thought I’d share that you won’t hear a single complaint from me about the heat. Give me 100 degree temps over down coats, snow boots, and blizzards any day!

Since it was already 87 when I woke up, I sure was glad that I had prepped another delicious bowl of overnight hot cereal for breakfast. Mixed into this bowl was a couple of cherries, halved, and blueberries with a mix of AB and PB on top. No egg whites this week since they were out when I went to the store. I miss the protein though because it leaves me hungry for lunch earlier.

Since my tummy was rumbling over the voices in my office, I broke into this delicious lunch. We have a simple garden salad with romaine and spinach, cucumber, carrot, and tomato. Plus, a serving of lentil sloppy joe’s with ~1/4c brown rice. Y.U.M. The sloppy joe mix is even better after sitting overnight, it just doesn’t look too pretty!

My snack this afternoon was a cup of cherries plus a GF flatbread with a smear of red pepper hummus.

I trekked to the gym after work but wasn’t in the mood for pilates class. I was sweaty when I got to the gym and decided to try out one of the new weight routines I had put together. I did back / shoulders / arms / abs and cooled down with a couple of miles on the stationary bike. My foot is still giving me some trouble (as it has been since I got back from Chicago) so I’m not sure if I’m happy or nervous to be going back to the doctor on Friday…

I stopped to pick up some sushi for dinner because cooking just didn’t sound appealing. I started my meal off with 4 pieces of veggie sushi (and picked out the avocado, ick). I then ate the last ounce of baked tofu and a serving of baked beans. Random? Yes. Delicious? But of course!

I had a bunch of stuff to take care of tonight so I’ve been working away. On the agenda is some *GMAT* prep, sorority convention wrap up, and a couple of other things. I also managed to prep my meals for tomorrow. It’s going to be an early bedtime methinks.

I nibbled on some frozen fruit with a drop of cottage cheese and a slice of toast and now I’m on the home stretch! Off to wrap things up. There’s only 2 days left til the weekend!

What was your favorite summer activity as a kid? Anything quirky happen in your hometown over the summer?
I used to love running around the neighborhood with my brother, swimming, riding bikes, playing sports, etc. We frequently set up lemonade stands in between sports games, pool parties, and other adventures. And of course, I won’t forget Augusts with 100+ degree days in a row where the heat, cooking eggs on the sidewalk, and more made the evening new B-) 

The Perfect Sunday

After all of the excitement from Friday and the day yesterday, I didn’t have it in me to do anything too exciting. I met my friend Jordan for dinner at Open City, which was lovely.  I had a delicious Sweet Pea soup and the special Grilled Cheese salad that had halloumi cheese, cucumber, tomato, and greens with a lemon-chive vinaigrette. It was a perfect summer meal but I forgot to take pics.

I stopped by a friend’s going away party but only stayed for a short while because I got so tired. I was so excited to see my bed!

This morning I was hoping to sleep in a bit longer but a loudly growling stomach woke me up. My usual suspects didn’t sound appealing at all and my stomach was telling me that it needed food quick. I broke into my special stash of Udi’s Gluten Free bagels and defrosted and toasted one. While the bagel toasted, I cooked up a handful of spinach with ~ an egg white or 2 which went on top of half the bagel, while the other was topped with some Earth Balance.

I LOVE these bagels from Udi’s. They are quite the special treat! I wish they weren’t so caloric but it was definitely worth it.

I spent about an hour or so doing chores and then whipped up this berry salad to bring to my friend’s pool for a little brunch and sun time. They are lucky I like ‘em because I shared some of my fresh and delicious berries :-)   This salad had blueberries, strawberries, cherries, and black raspberries.

We were out at the pool for about 3.5 hours and I was surprised that my bagel sandwich held me over so well. I got hungry just as I was walking back into my apartment. The heat probably had something to do with that too :)

I had leftovers from my lunch on Friday over a bed of spinach. I went with a co-worker to a new place called Freshii downtown. You can either order off the menu or create your own salad, rice bowl, sandwich, or wrap. I was really impressed with the freshness and plethora of ingredients and the healthfulness of my meal as well. I got a rice bowl filled with veggie, edamame and black beans, and almond slices. All topped with a bit of teriyaki sauce.  I can’t wait to go back, especially since the veggies are unlimited unlike other create-your-own salad places in DC.

I finally was motivated to go to the gym and did about 25 minutes (split up) on the stationary bike plus the arms workout from Week 1 of the Summer Shape Up.

For dinner tonight I needed to use up a ton of veggies in my fridge so I roasted a big batch of onion, bell pepper, broccoli, mushrooms, and sweet potato fries. Besides it being a bit warm, I kind of enjoyed being in the kitchen.

For the fries:

  • Preheat oven to 400F
  • Wash and dry sweet potato 
  • Cut into fry shapes. I cut mine in half, then slice each half. Then I cut each slice into segments that look like fries.
  • Place on foil line, cooking spray baking sheet.
  • Bake for ~20 minutes. Flip. Bake for ~10 more minutes
  • Enjoy!

I also had a serving of baked beans on the side.

Dessert was the last ~3/4 berries with a spoonful of yogurt and pinch of cocoa powder for a treat.

It’s finally time to shower and then I’m probably heading to bed. I’m drained from the sun, but wouldn’t trade this perfect summer day for anything!!

Scatter-brained

Despite it being a Thursday, today felt like the longest day of the week yet. I’m not sure why I’m in a mini funk – I’m getting plenty of sleep, my foot is feeling stronger each week, and I’m taking care of what I need to do. Perhaps its hormones? A summer slump? Stress?

I had to be at work earlier than usual for more of orientation. In honor of that, and the fact that it was becoming dangerous, I celebrated Thursday morning with Cherry Hot Cereal in a Chocolate PB jar!  This was intense. I didn’t realize how sweet it would be and was glad to balance it out with an egg white. The warm chocolate PB was heavenly though!!

It was a long morning of sessions and I finally ate lunch at my desk around 1pm. I had another monster salad with:

  • spinach and romaine
  • 2 carrots
  • cucumber and broccoli
  • bell pepper
  • 1/4c black beans, ~1T fat free feta
  • same spices as the rest of the week
  • 6 or 7 blue corn chips

I spent the rest of the afternoon in meetings and then rushed home to tackle my laundry. Fun times. Somewhere in there I finished up the last 1/4c of yogurt in the container and added a few frozen berries and a drop of PB.

My grazing kicked in and after a few more chips, I decided to eat dinner and end the nibbling. I had the leftover half serving of pasta and roasted veggies that I topped with some tomato sauce and 1T parm. And a slice of garlic toast.

There was more grazing – I can’t figure out why, perhaps I needed more protein? I had a few more chips, some eggplant and pepper dip, and a few pieces of baked tofu.

I dragged myself out of my apartment to meet a friend for a bit and ended up taking a 3.5 mile walk which felt glorious. It brought my mileage to 7.3 miles for the day and I only have a slight ache in my foot! On the way, I got a kids’ sized Rita’s Italian Ice – half vanilla, half mango-peach. Summer is officially here now that I’ve had my Rita’s!

Time to shower and get to bed soon. I’m hoping this funk goes away – I have a ton to look forward to in the next 10 days and don’t want to be mentally absent from it for even a moment! I’m hoping my brain will get itself organized soon :-)

Chico’s Overload

No, no, don’t worry. I haven’t abandoned my uber-fashionable style of sneakers with everything for this women’s clothing store. But, I did find myself in the midst of their spring and summer collection last night, with a side of men in polos and Hawaiian shirts. Where the heck was I? At the James Taylor and Carole King concert!!  My friends and I spent a wonderful evening with these 2 music icons… and brought down the median age by at least 15 years :)

The truth is, I’m an old soul and never protested the music my parents had on the radio growing up. I was excited to see these two perform, and I even learned that Carole King sings some of my favorite “oldies” songs (that I had no clue who sang them before). It was a great summer night with friends!  The best ending – we all took advantage of the wonderful cool summer night and walked home to avoid the masses on the Metro. The downside: another late night = less sleep during a busy week.

As promised, here’s just a sampling of things going on this week:

  • multiple errands in preparation for my friend’s wedding this weekend
  • orientation prep at work = lots of meetings
  • pilates
  • physical therapy and bike riding :)
  • packing

As a type-A personality, I need to get stressed out when I have a lot on my plate but the way I remedy that is by being super organized, scheduling everything on my calendar and keeping a to-do list full of any and everything that has to get done. It helps keep my mind from going into overdrive, controls my stress levels, and helps me track my progress and feel accomplished throughout the week. I also carved out an hour of relaxation time yesterday to read while laying on my roof. It was glorious and definitely calmed my mind!

Hot cereal with 1/4c almond milk, 2/3c water, chia, 1tsp PB drizzle, 1 crushed pecan, 1/2c berries

Cucumber slices with 21 Seasoning Salute

Spinach salad with chicken breast and asparagus tips

2oz yogurt with a drop of fig jam and cinnamon… plus a serving of brown rice chips – they’re addicting and oh, so delicious

Veggie burger topped with BBQ and hot sauce, veggie salad, 1/4c brown rice mixed with spinach and soy sauce, serving of yogurt with a few raisins, cinnamon
