Scenes from the 1st Seder

I just got back from a long, sweaty workout including 6o minutes on the elliptical and another 30 of abs and stretching. It was definitely needed after a wonderful (and super delicious) 1st seder last night. I’m off to enjoy my last day at home so please enjoy these pictures from last night until I report back with more details (and a gluten free matza review!)

Jam-Packed

To say that my trip home has been jam-packed from the get-go might be the understatement of the week! I haven’t been back to Dallas in almost 4 months and I’m trying to make up for it in just 4 short days!

Last night my mom picked me up and we immediately headed to the store to load up on some produce to eat while I’m home. My parents don’t keep much food in the house anymore since they are empty nesters and although she might grumble, I know my mom loves stocking up on groceries!

We had dinner last night at one of my favorite restaurants – Blue Mesa. The only picture I have is of the signature margarita I enjoyed while dining on the patio. The weather is gorgeous – sunny, warm but not too hot, and no humidity. My sundresses and I are in love!

Today started on the right foot with breakfast and a 4.5 mile walk with an old friend. I love when our visits home overlap and we’re able to catch up and squeeze in some exercise along with it!

I heated up last night’s leftover black beans and Adobe pie and enjoyed them a top a salad of spinach, red pepper, zucchini, and some feta.

My mom and I spent some more quality time together in the afternoon doing various things – shopping, manicures, etc. plus we visited my brother’s new residence and met his roommates. For dinner we went to Kenny’s Italian Kitchen as my dad had heard that they serve gluten free pasta. I ended up with a chopped salad for my meal with a small side of pasta and everything was beyond delicious! It was nice to be back home and have a family dinner al fresco to soak up the spring weather.

I’m heading to bed before another [fun]filled day before Passover festivities begin tomorrow night.

Trips home – action-packed or quiet and relaxing?

Quiet Valentine

If it wasn’t for people at the office and the extra chocolate everywhere, I might have forgotten about Valentine’s Day yesterday. I’m not one who loves or hates the holiday. Rather, I feel kind of indifferent. I enjoy the chance to let loved ones know that I love and appreciate them and just try to enjoy the day, regardless of my own relationship status.

I was lucky enough to receive a few fun things that made the day special that I think proves that guys aren’t the only ones whose hearts can be accessed through their stomachs!

My parents sent me a beautiful card and a Whole Foods gift card that will surely be put to use. My grandparents also sent me a little something :) While it wasn’t unexpected, my March edition of Vegetarian Times arrived.

I also came home to this unexpected package from the folks at Bakery on Main. They specialize in gluten free granola and bars and I’m looking forward to trying out these products!

A Weekend Full of Treats

It’s hard to believe that another holiday weekend has come and gone. While we don’t celebrate Christmas, this weekend was full of celebrations, family, food, laughter, and of course, treats for all.

It was cold and rainy all day on Friday so we spent the majority of our day around the house. Closets were cleaned out, movies were watched by the fire, and we relaxed.

My dad and I had blueberry hot cereal with grilled pear and peanut butter on top which was delicious.

I made treats to have on hand for the weekend: Puppy Chow and 2 kinds of chocolate bark – butter toffee and caramel pecan.

A light lunch featuring leftover veggies and a Tex-Mex treat of a vegan tamale filled with black beans.

Friday night dinner was at a local Mexican restaurant where we treated my grandmother for her birthday. My aunt, uncle, and cousins from Houston drove in for the occasion and it was a treat to have everyone together.

On Christmas morning, my mom whipped up some waffles for breakfast. I love when she makes them for me; they were a great treat to start the day.(she also made a regular batch for her and my brother)

We watched a movie by the fire and Cody begged for a treat of his own from my dad.

Yesterday afternoon we headed to my grandparents’ house to continue the celebrations. We were celebrating Chanukah together as well as my grandmother’s 78th birthday! She was born on the 25th so we’ve always had something fun to do on Christmas day.

My grandmother is quite the cook and I’m lucky in that she’s always cooked special foods for me that I could eat with my allergies. In addition to making a gluten free version of her latkes, she also picked up a gluten free rosemary foccacia bread for my dad and I to try and made us a gluten free peach cobbler for dessert!

Our late lunch / early dinner consisted of brisket, turkey, sweet potatoes, latkes, homemade cinnamon applesauce, broccoli, and purple cabbage.

We opened gifts as a family and one thing everyone received this year was a Snuggie! Here’s the obligatory grandchildren shot.

We treated my grandmother to another rendition of Happy Birthday, enjoyed dessert, and called it a night 6 hours later.

With 2 of my cousins off at college, me in DC, and some family in Houston, it was such a wonderful treat that we were able to come together to celebrate my grandmother and Chanukah for a weekend!
