To say that my trip home has been jam-packed from the get-go might be the understatement of the week! I haven’t been back to Dallas in almost 4 months and I’m trying to make up for it in just 4 short days!
Last night my mom picked me up and we immediately headed to the store to load up on some produce to eat while I’m home. My parents don’t keep much food in the house anymore since they are empty nesters and although she might grumble, I know my mom loves stocking up on groceries!
We had dinner last night at one of my favorite restaurants – Blue Mesa. The only picture I have is of the signature margarita I enjoyed while dining on the patio. The weather is gorgeous – sunny, warm but not too hot, and no humidity. My sundresses and I are in love!
Today started on the right foot with breakfast and a 4.5 mile walk with an old friend. I love when our visits home overlap and we’re able to catch up and squeeze in some exercise along with it!
I heated up last night’s leftover black beans and Adobe pie and enjoyed them a top a salad of spinach, red pepper, zucchini, and some feta.
My mom and I spent some more quality time together in the afternoon doing various things – shopping, manicures, etc. plus we visited my brother’s new residence and met his roommates. For dinner we went to Kenny’s Italian Kitchen as my dad had heard that they serve gluten free pasta. I ended up with a chopped salad for my meal with a small side of pasta and everything was beyond delicious! It was nice to be back home and have a family dinner al fresco to soak up the spring weather.
I’m heading to bed before another [fun]filled day before Passover festivities begin tomorrow night.
