Pretty Solid Week

Whew, what a week! One of the perks of working where I do is that I had off for a good portion of the fall due to some holidays. Both last week and this week I had Thursday and Friday off . Not too shabby, even if it does make for a hectic 3-day work week! (we cram 5 days of work into 3)

Regardless of the stress I’ve been under this past week was pretty great.

On Monday I got 2 pieces of good news: I was asked to join a networking group I’d been a guest at since the move. #nerdalert It’s all women and there are some talented women from across the working world! It’s also a great opportunity to make new friends :)

I also found out that I’ll be making a quick trip to New York City in December for a reunion meeting of a professional development program I did back in DC. Not only am I excited to reconnect with a few old friends, but I’m also looking forward to a few days on the East Coast, trying a gluten free bagel, and finally seeing Wicked on Broadway! It’ll be a whirlwind 55 hours! From there I’ll go to Chicago for a work meeting and then Austin for a bachelorette party! I’m tired already.

Did I mention that I got to go to Game 6 of the ALCS Championship series last week? The Rangers crushed Detroit that night and clenched a 2nd consecutive championship. Atta boys! I’ve also gotten sucked into watching the World Series, including at a fun Thursday night viewing party.

Feelin Good

Thank you all so so much for your kind words, congratulations, and support of my big announcement yesterday. I never expected such a reaction and am really touched by each and every comment, Tweet, and email I received. Thank you!

Sharing the news took a weight off my shoulders and I’ve been feeling pretty good so far this week. The positive thinker in me thinks that by putting out positive news into the universe the momentum is building. It sounds a little cooky but that’s what I’m believing this week :)

Over the weekend I bought myself an early birthday present when I feel in love with this tank top by accident. I rocked it at the gym and am even more in love than when I first tried it on!

Lastly, I discovered a recipe utilizing rice sticks on the New York Times website that I’ve been wanting to try for a few days now. I’ve had some rice sticks in my pantry for way too long and thought this would be the perfect way to use them up.

Rice Stick and Shredded Vegetable Salad

Inspired by this recipe from NY Times Recipes for Health

  • 1.5c thinly sliced red cabbage
  • 1/2c julienne red pepper
  • 1/2c julienne cucumber
  • 7 oz rice sticks
  • 1c shredded carrot (~1 large)
  • 2 T fresh mint leaves, chiffonade
  • ~1/4c cilantro, roughly chopped
  • 2T fresh lime juice
  • 1/2t sugar
  • 2T rice vinegar
  • 1T low sodium GF soy sauce
  • 1T grapeseed oil

1. Place the cabbage in a bowl, salt generously and cover with cold water. Let sit for 15 minutes, then drain and dry.

2. Meanwhile, place the rice sticks in another bowl and cover with hot water. Let sit for 20 minutes or until pliable, while you prepare the vegetables. Drain, and roughly chop the noodles into smaller pieces.

3. In a large bowl, toss the noodles with the vegetables, mint and cilantro.

4. Whisk together the lime juice, rice vinegar, sugar, soy sauce, and grapeseed oil. Toss with the noodle mixture, refrigerate for ~15 minutes to let flavors meld, and serve.

I served this salad on top of butter lettuce with crushed almond slivers and a few cashews and a light drizzle of teriyaki sauce. It was absolutely delicious and left me feeling not too stuffed on a gorgeous summer night!

This recipe yields 6 servings (1.2c each) so you will have plenty of leftovers to enjoy throughout the week!

Making This Week Great

Hi Friends! I’m breaking radio silence to check in with you all. I had kind of a rough week last week and chose to cope the best way I know how – spending time doing things I love: hanging out with friends and getting in lots and lots of walking. Oh, plus a little bit of comforting carbs for fun :)

Amidst one of my walks last week I realized that while everything might not be roses at the moment I have a lot to be grateful for. My wonderful friends have made the past few weeks especially great and spending time outside has made me thankful for summer’s arrival. These views helped too, I’m sure.

I’m going out of my way to make things great and send lots of positive energy out into the world.

Here’s to focusing on things that really matter and not letting the noise get us down!

Out With the Old and In With the New?

Happy Monday! The day actually passed by quicker than I had anticipated. I was quite restless last night and despite every effort to get to sleep at a reasonable time, was up until at least 2:30 am and got maybe 5 hours of sleep? I was not happy with myself when I woke up!

Yet, I was determined to turn the day around once I realized the sun was going to be out and I had very little to do in order to get myself to work. You see, last night I cooked and packed my breakfast and lunch so that all I had to do was grab it from the fridge this morning.

I had an egg white and then blackberry hot cereal topped with a 1/2 tablespoon of peanut butter for breakfast. I remembered to take a picture half-way through – blame my sleepy Monday brain!

Lunch was a combination of various leftovers – collard greens, BBQ black-eyed peas, and some vegetable brown rice, all topped with some fat free feta cheese.

The afternoon flew by and I also ran a quick errand to get myself moving around a little bit which felt good after a day full of sitting. I had a snack mid-afternoon: a rice cake, string cheese, and pistachios x2.

I think the string cheese might not be the freshest because I got a mean stomach ache for the last 30 minutes of the day. That prompted me to cancel my gym session, which is fine because I delayed the whole Resolutionaries situation, and came home. My stomach finally started to feel better and my hunger for dinner returned.

I microwaved some frozen broccoli and spinach which was topped with about half of a serving of brown rice pasta and 3 meatballs and sauce from home. I am so glad I froze a container to bring back with me – it’s helping keep the year bright and positive!

I got full before I finished the bowl so I saved it for later.

In honor of the new year, it was time for me to upgrade a few things in my life. First, my sneakers finally died (no more support, too soft, well-worn) and I am excited to now be wearing new ones.

Secondly, in addition to lusting after a dSLR camera for a while, my trusty point and shoot has been letting me know that it’s seen better days. It’s been dropped one too many times and received some tough love. I’ve had it for 3.5 years! I found a great deal through a reliable company, unlike this one, and got a great deal on this sleek new one. All of the pictures in this post were taken with it and I can already tell a difference in going from 7.1 to 14.1 megapixels!

Otherwise, it’s the same ole, same ole here. I’m going to read this until the season premiere of Greek.

Do you start the new year off with anything new? I usually don’t but this year, it’s just how things worked out :)
