It’s already Thursday?!

I’m not exactly sure where this week has gone. I can’t believe it’s already been 4 days since I flew to Dallas with no return ticket to DC. Typing that “out loud” just sounds so weird to me.

Monday was the only day I really gave myself to mope around and be sad I wasn’t in DC. Then, it was time to tackle some to-dos to get this Dallas party started. I’ve only unpacked my 2 duffle bags and am ignoring the mountain of boxes that has now arrived at home.

I’ve been to more car dealerships and driven more cars in the past 4 days than in the past 8 years but am all set to buy a car tonight! After that, the only shopping I’ll be doing will be of the mall and grocery variety ;)

On Tuesday I got a sneak preview of some of the folks I’ll be working with at my new job. I participated in an all-day Myers-Briggs retreat which was fascinating and played to my nerdy love of training and development.

GF Tip of the Week

It’s back! I’ve been seriously slacking my gluten free tips as of late. Big things have been going on that distracted me but I’m happy to report that this fave feature has returned.

Today I wanted to share a few tips for stocking a healthy snack drawer at work; it’s something I couldn’t survive without!

I like to make sure my work snacks still pack a nutritional punch to keep me powered through my day or fuel me up before a mid-day workout. Some of my go-to gluten free snacks include:

  • nuts – pistachios, cashews, almonds
  • trail mix
  • small bags of microwave popcorn
  • fruit leathers or dried fruit
  • Larabars
  • dry cereal
  • a jar of peanut butter (not negotiable. It goes on fruit, rice cakes, popcorn in a dire situation, and more)
  • rice cakes
  • seaweed snacks

As you can see, I love to have a variety of snacks, both salty and sweet, on hand to satisfy whatever craving might strike. This saves me money in the long run and avoids running the risk of going hungry if there isn’t gluten free safe food available at a team lunch or at a store nearby!

Thursday Things

Has this week flown by for anyone else? I chalk it up to packed days with tons of meetings but that’s great because I just realized tomorrow is Friday. Hooray!

I thought I’d share some fun little Thursday things since today threw me a little curveball.

  • Curveball = a lovely migraine that emerged early this afternoon. I popped an Advil as soon as the blind spots started and luckily it disappeared completely ~2.3-3 hours later. It’s quite the experience to sit at work with blind spots and half of your body numb and tingly!
  • Spin kicked my butt this morning. I went to a different instructor than my first class and she made us work really hard. I was toast by the end of class and it felt great.
  • In my post-migraine haze I watched X-Men on Netflix and it kinda made me smile.

So after my afternoon excitement I wasn’t in the mood to do much but lay on the couch. When I got hungry for dinner, I whipped up a quick meal of chicken fried rice using various items from my fridge and freezer.

5 minute Fried Rice

  • 1/2c frozen broccoli florets
  • 1/2c bell pepper strips
  • 1/3c total frozen peas and corn (half and half)
  • 3oz chicken breast
  • 1/2c cooked brown rice
  • 1.5T liquid egg whites
  • garlic powder
  • 1T teriyaki sauce
  • 1/2T soy sauce

In a non-stick sprayed skillet cook up the vegetables until defrosted. Season with garlic powder and stir. Add chicken, rice, and sauces and stir until liquid is all absorbed. Create a well in the middle of your pan and add egg whites. Let sit for a minute to firm up and then scramble egg and mix with rice mixture. Cook one more minute (or to desired texture) and serve. I topped mine with some almond slices and sriracha.

This was a quick and easy comfort food meal on a night where I really didn’t want to cook!

I’m forseeing a little more couch time and then an early bedtime in my future so ensure I don’t get a repeat headache tomorrow. G’night friends!

 

Feels Like a Whole New World

During Passover there is a big focus on food. It takes a lot of attention to remove anything leavened, make with corn and soy, etc. out of the mix for 8 days!  Even though I’m used to devoting a good amount of thinking time to food it seems like Passover has kicked it up a notch for me. The discovery of gluten free matzah has also opened up a whole new world of meal ideas for me! Also going without my usual whole grain carbs is a good change of pace from what I feel like has been a carb-heavy couple of months.

There is a traditional breakfast called Matzah Brei which is matzah soaked with water then mixed with egg, sugar, cinnamon, and cooked in a frying pan. While I was home my dad tried his hand at an adapted version, mixing in about 1/3 of a piece of matzah with one egg, salt and pepper.

I recreated this with a pinch of cheese and had it alongside fresh cut fruit (and not sausage – that was my dad’s!) yesterday for breakfast before my flight back to DC.

This morning for breakfast I wasn’t sure what to eat. I woke up with a stomach ache and I’m not sure what caused it. I had some blueberries and pineapple with a spoonful of charoset and an egg with 1/2 a piece of matzah, half with red pepper spread to eat my egg with and half with almond butter and strawberry jam.

My stomach thankfully felt a lot better so perhaps it was hunger pangs? Either way, it was amazing to have a bit of carbs as part of breakfast to give me some morning energy!

I ate around 9 and my stomach was grumbling by 11:30. I grabbed some pistachios to hold me over until just past noon. Lunch was a hugh jass salad with roasted broccoli, asparagus, carrots, and sweet potato, olives, sundried tomatoes, and a pinch of parmesan cheese.

A couple of hours later I was hungry again and broke into my snack of plain Greek yogurt with cinnamon, pineapple, and a bit of strawberry jam mixed in.

Sure enough, by 4:15 I was hungry and picked up a small cup of vegan leek and potato soup. It was pretty tasty and I was glad to have something that finally filled me up!

I headed to the gym after work and did 35 minutes on the elliptical. This felt a bit tougher than usual, perhaps because of a bad night’s sleep or maybe because I didn’t fuel how I usually do on workout days. After stretching and foam rolling I headed home to relax a bit until I was hungry for dinner.

Around 7 it was time to eat. I started with small bits of potatoes and a dairy free squash casserole that I brought back from home. I also had deconstructed stuffed cabbage (meatballs and cabbage in a tomato-y sauce) with some horseradish. Man, I love my Bubbye’s (grandmother) cooking.

I wasn’t quite full so I had some kosher for Passover tomato sauce mixed with spinach with 2 little pieces of a basil cracker (gf matzah variety!) that my grandmother sent me back to DC with.

I’m snacking on some fruit and hoping that tomorrow when I wake up it feels like a whole new work and my body is a bit more energetic!
